  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 cups of sliced cabbage
  • 1/4 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • Salt and pepper to taste
  • Sliced green onions and sesame seeds for garnish (optional)

Method:

  1. Cook the noodles according to the package instructions, then drain and set aside.
  2. In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, sesame oil, and sugar. Set this sauce aside.
  3. Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the sliced chicken and stir-fry until it's cooked through, about 4-5 minutes. Remove the chicken from the pan and set it aside.
  4. In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and stir-fry for about 30 seconds, or until fragrant.
  5. Add the sliced onion, bell pepper, carrot, and cabbage to the pan. Stir-fry the vegetables for 3-4 minutes until they start to soften.
  6. Return the cooked chicken to the pan with the vegetables and pour the sauce over everything. Stir-fry for another 2-3 minutes, allowing the sauce to coat the chicken and vegetables.
  7. Finally, add the cooked noodles to the pan and toss everything together. Cook for an additional 2-3 minutes, or until the noodles are heated through and well-coated with the sauce.
  8. Taste and adjust the seasoning with salt and pepper if needed.
