Ingredients:
- 1 lb lamb stew meat, cut into bite-sized pieces
- 1 cup dried chickpeas, soaked overnight and drained (or use canned chickpeas)
- 1 large onion, finely chopped
- 3 carrots, peeled and diced
- 3 celery stalks, diced
- 4 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 6 cups beef or lamb broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Method:
- In a large pot, heat the olive oil over medium heat. Add the lamb pieces and brown them on all sides. This adds flavor to the soup.
- Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.

- Add the soaked and drained chickpeas to the pot.
