Ingredients:
- 2 tablespoons (30 ml) olive oil
- 1 lb (450 g) lamb shoulder, cut into 1-inch pieces
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 eggplant, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 can (14 oz/400 g) diced tomatoes
- 1 teaspoon (5 g) dried thyme
- 1 teaspoon (5 g) dried oregano
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Method:
- In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the lamb pieces and cook until browned on all sides. Remove the lamb from the skillet and set aside.
- In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.
- Add the diced eggplant, zucchini, red bell pepper, and yellow bell pepper to the skillet. Cook for about 5 minutes, or until the vegetables start to soften.
- Return the lamb to the skillet and add the diced tomatoes, dried thyme, and dried oregano. Stir well to combine.
- Reduce the heat to low, cover the skillet, and let the lamb and vegetables simmer for 1 hour, or until the lamb is tender and the flavors have melded together.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
