French Lamb Ratatouille

Ingredients:

  • 2 tablespoons (30 ml) olive oil
  • 1 lb (450 g) lamb shoulder, cut into 1-inch pieces
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 eggplant, diced
  • 1 zucchini, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 can (14 oz/400 g) diced tomatoes
  • 1 teaspoon (5 g) dried thyme
  • 1 teaspoon (5 g) dried oregano
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Method:

  1. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the lamb pieces and cook until browned on all sides. Remove the lamb from the skillet and set aside.
  2. In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent and fragrant.
  3. Add the diced eggplant, zucchini, red bell pepper, and yellow bell pepper to the skillet. Cook for about 5 minutes, or until the vegetables start to soften.
  4. Return the lamb to the skillet and add the diced tomatoes, dried thyme, and dried oregano. Stir well to combine.
  5. Reduce the heat to low, cover the skillet, and let the lamb and vegetables simmer for 1 hour, or until the lamb is tender and the flavors have melded together.
  6. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
