Ingredients:

  • 1 bunch of kale or collard greens, thinly sliced
  • 4 medium-sized potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1/4 cup olive oil
  • 1 or 2 chouriço or linguica sausages, sliced (you can also use a chorizo sausage as a substitute)
  • 6 cups chicken or vegetable broth
  • Salt and pepper to taste

Method:

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until they become translucent.
  2. Add the sliced sausage to the pot and cook for a few minutes until it releases its flavor into the oil.
  3. Add the diced potatoes to the pot, stirring them with the other ingredients for a couple of minutes.
  4. Pour in the chicken or vegetable broth, bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender.
  5. Mash some of the potatoes against the side of the pot to thicken the soup.
  6. Add the thinly sliced kale or collard greens to the pot. Let the soup simmer until the greens are tender but still vibrant green.
  7. Season the soup with salt and pepper to taste.
  8. Serve the Caldo Verde hot, drizzling each serving with a bit of olive oil.
