Here's a basic recipe for Caldo Verde, a traditional Portuguese soup:
Ingredients:
- 1 bunch of kale or collard greens, thinly sliced
- 4 medium-sized potatoes, peeled and diced
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1/4 cup olive oil
- 1 or 2 chouriço or linguica sausages, sliced (you can also use a chorizo sausage as a substitute)
- 6 cups chicken or vegetable broth
- Salt and pepper to taste
Method:
- In a large pot, heat the olive oil over medium heat. Add the chopped onions and garlic, sautéing until they become translucent.
- Add the sliced sausage to the pot and cook for a few minutes until it releases its flavor into the oil.
- Add the diced potatoes to the pot, stirring them with the other ingredients for a couple of minutes.
- Pour in the chicken or vegetable broth, bring the mixture to a boil, then reduce the heat and let it simmer until the potatoes are tender.
- Mash some of the potatoes against the side of the pot to thicken the soup.
- Add the thinly sliced kale or collard greens to the pot. Let the soup simmer until the greens are tender but still vibrant green.
- Season the soup with salt and pepper to taste.
- Serve the Caldo Verde hot, drizzling each serving with a bit of olive oil.
