Description:
Creating an "immunity-boosting" soup involves incorporating ingredients that are rich in vitamins, minerals, and antioxidants known to support the immune system. Here's a basic recipe for an immunity-boosting soup:
Ingredients:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece of ginger, grated
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 medium-sized sweet potato, peeled and diced
- 1 cup broccoli florets
- 1 cup spinach or kale, chopped
- 6 cups vegetable or chicken broth
- 1 teaspoon turmeric powder
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- Juice of 1 lemon
- Fresh herbs (such as parsley or cilantro) for garnish
Method:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add minced garlic and grated ginger to the pot. Sauté for another 1-2 minutes until fragrant.
- Add carrots, celery, sweet potato, broccoli, and greens (spinach or kale) to the pot. Stir to combine.
- Pour in the vegetable or chicken broth. Bring the soup to a boil, then reduce the heat to a simmer.
- Add turmeric, cumin, cayenne pepper, salt, and pepper. Stir well.
- Allow the soup to simmer until the vegetables are tender, usually about 15-20 minutes.
- Just before serving, add the lemon juice and stir.
- Taste and adjust the seasoning if necessary.
- Ladle the soup into bowls, and garnish with fresh herbs.
