Ingredients:
- 1 tablespoon sesame oil
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup kimchi, chopped
- 4 cups vegetable or chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon gochugaru (Korean red pepper flakes) - adjust to taste
- 1 block firm tofu, cut into cubes
- 2 green onions, sliced
- 2 eggs
- Salt and pepper to taste
- Sesame seeds for garnish
- Fresh cilantro or parsley for garnish (optional)
Method:
- In a large pot, heat the sesame oil over medium heat. Add the sliced onions and sauté until they become translucent.
- Add minced garlic and grated ginger to the pot. Sauté for another minute until fragrant.
- Stir in the chopped kimchi and cook for 2-3 minutes.
- Pour in the vegetable or chicken broth, soy sauce, and gochugaru. Bring the soup to a simmer.
- Gently add the tofu cubes to the simmering soup. Allow it to cook for about 5-7 minutes until the tofu is heated through.
- Season the soup with salt and pepper to taste. Adjust the spiciness by adding more gochugaru if desired.
- Crack the eggs into the soup, one at a time, making sure they are evenly distributed. Allow them to poach until the whites are set but the yolks are still runny.
- Sprinkle sliced green onions and sesame seeds over the soup.
- Optional: Garnish with fresh cilantro or parsley for added flavor.
