  • 1 tablespoon sesame oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced

  • 1 cup kimchi, chopped
  • 4 cups vegetable or chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon gochugaru (Korean red pepper flakes) - adjust to taste
  • 1 block firm tofu, cut into cubes
  • 2 green onions, sliced
  • 2 eggs
  • Salt and pepper to taste
  • Sesame seeds for garnish
  • Fresh cilantro or parsley for garnish (optional)

Method:

  1. In a large pot, heat the sesame oil over medium heat. Add the sliced onions and sauté until they become translucent.
  2. Add minced garlic and grated ginger to the pot. Sauté for another minute until fragrant.
  3. Stir in the chopped kimchi and cook for 2-3 minutes.
  4. Pour in the vegetable or chicken broth, soy sauce, and gochugaru. Bring the soup to a simmer.
  5. Gently add the tofu cubes to the simmering soup. Allow it to cook for about 5-7 minutes until the tofu is heated through.
  6. Season the soup with salt and pepper to taste. Adjust the spiciness by adding more gochugaru if desired.
  7. Crack the eggs into the soup, one at a time, making sure they are evenly distributed. Allow them to poach until the whites are set but the yolks are still runny.
  8. Sprinkle sliced green onions and sesame seeds over the soup.
  9. Optional: Garnish with fresh cilantro or parsley for added flavor.
