Here's a simple and delicious recipe for slow cooker chicken, bacon, and potato soup:
Ingredients:
- 1.5 lbs (about 700g) boneless, chicken breasts
- 6 slices of bacon, chopped
- 4 cups (about 1 liter) chicken broth
- 4 cups (about 1 kg) potatoes, peeled and diced
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 1 cup (240ml) heavy cream
- 1/2 cup (about 60g) all-purpose flour
- 1 cup (about 120g) cheddar cheese, shredded (for garnish)
- Fresh parsley, chopped (for garnish)
Method:
- Place the chicken breasts at the bottom of the slow cooker.
- In a skillet over medium heat, cook the chopped bacon until it's crispy. Remove excess fat, leaving about 1-2 tablespoons in the pan.
- Add chopped onions and minced garlic to the skillet with bacon fat. Sauté until onions are translucent.
- Transfer the bacon, onions, and garlic mixture to the slow cooker over the chicken.
- Add diced potatoes, sliced carrots, and sliced celery to the slow cooker.
- Pour chicken broth over the ingredients in the slow cooker. Add thyme, rosemary, salt, and pepper. Stir to combine.
- Cover and cook on low for 6-8 hours or until the chicken and vegetables are tender.
- About 30 minutes before serving, shred the cooked chicken directly in the slow cooker.
- In a separate bowl, whisk together heavy cream and flour until well combined. Stir the mixture into the slow cooker to thicken the soup.
- Continue cooking for an additional 30 minutes.
- Taste and adjust the seasoning if needed.
- Serve the soup hot, garnished with shredded cheddar cheese and chopped fresh parsley.
