Description:

Stuffed marrow bake with mince is a comforting and hearty dish where hollowed-out marrow (zucchini or squash) is filled with a flavorful minced meat mixture and then baked to perfection. Here's a recipe for making stuffed marrow bake with mince:

Ingredients:

  • 2 large marrows (zucchini or squash)
  • 1 pound (450g) ground beef or lamb (you can also use a mixture of both)
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and black pepper, to taste
  • 1 cup grated cheese (e.g., cheddar or mozzarella)
  • Olive oil for sautéing

Method:

  1. Preheat your oven to 375°F (190°C).
  2. Slice the marrows in half lengthwise. Scoop out the seeds and some of the flesh to create hollow "boats." Keep the flesh you've removed, as you'll use it in the filling.
  3. In a large skillet, heat some olive oil over medium heat. Add the chopped onion and minced garlic and sauté until they become translucent.
  4. Add the minced meat to the skillet and cook until it's browned, breaking it into smaller pieces as it cooks.
  5. While the meat is cooking, finely chop the reserved marrow flesh and add it to the skillet with the meat.
  6. Stir in the cooked rice, diced tomatoes (including the juice), dried oregano, and dried basil. Season the mixture with salt and black pepper to taste. Cook for a few minutes until everything is well combined.
  7. Fill the hollowed-out marrows with the meat and rice mixture.
  8. Place the stuffed marrows in a baking dish and cover the dish with aluminum foil.
  9. Bake in the preheated oven for about 30-40 minutes until the marrow is tender.
  10. Remove the foil and sprinkle the grated cheese over the top of the stuffed marrows.
  11. Return the dish to the oven and bake for an additional 10-15 minutes or until the cheese is melted and bubbly, and the tops are nicely browned.
  12. Serve the stuffed marrow bake hot as a delicious and satisfying meal.
Feel free to customize the filling with your favorite herbs, spices, or vegetables to suit your taste. Enjoy your homemade stuffed marrow bake with mince!
