Ingredients:
- 8 ounces of chow mein noodles or egg noodles
- 2 boneless, skinless chicken breasts, thinly sliced
- 2 tablespoons vegetable oil
- 2 cloves of garlic, minced
- 1 small onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 carrot, julienned
- 2 cups of sliced cabbage
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 teaspoon sesame oil
- 1/2 teaspoon sugar
- Salt and pepper to taste
- Sliced green onions and sesame seeds for garnish (optional)
Method:
- Cook the noodles according to the package instructions, then drain and set aside.
- In a small bowl, mix together the soy sauce, oyster sauce, hoisin sauce, sesame oil, and sugar. Set this sauce aside.
- Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat. Add the sliced chicken and stir-fry until it's cooked through, about 4-5 minutes. Remove the chicken from the pan and set it aside.
- In the same pan, add the remaining 1 tablespoon of vegetable oil. Add the minced garlic and stir-fry for about 30 seconds, or until fragrant.
- Add the sliced onion, bell pepper, carrot, and cabbage to the pan. Stir-fry the vegetables for 3-4 minutes until they start to soften.
- Return the cooked chicken to the pan with the vegetables and pour the sauce over everything. Stir-fry for another 2-3 minutes, allowing the sauce to coat the chicken and vegetables.
- Finally, add the cooked noodles to the pan and toss everything together. Cook for an additional 2-3 minutes, or until the noodles are heated through and well-coated with the sauce.
- Taste and adjust the seasoning with salt and pepper if needed.
- Serve the chicken chow mein hot, garnished with sliced green onions and sesame seeds if desired.
