Ingredients:
- 1 lb salmon fillets, skinless and boneless, cut into bite-sized chunks
- 8 oz wide egg noodles
- 1 onion, finely chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 4 cups vegetable or chicken broth
- 4 cups water
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 cup broccoli florets
- 1 cup baby spinach leaves
- 2 tablespoons soy sauce
- 1 tablespoon fish sauce (optional)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro or green onions, chopped (for garnish)
Method:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5 minutes.
- Add the minced garlic and grated ginger. Cook for an additional 1-2 minutes until fragrant.
